Me cạo sạch, cho vào nồi đổ ngập nước, đun sôi cho me chín mềm. Dầm me, dùng rây lọc bỏ bã, giữ lại phần nước cốt me chua. Bóc vỏ 3 củ hành tím, 1 củ tỏi, thái lát. Ớt bỏ bớt hạt, thái lát. Lượng ớt tùy thuộc vào bạn muốn ăn cay nhiều hay ít. Cho hỗn hợp tỏi, hành tím, ớt vào máy xay xay nhỏ. Tép khô rửa sạch, để ráo nước. Đổ chút dầu ăn vào chảo, cho tép vào rang vàng.
Đổ hỗn hợp hành tỏi ớt xay nhỏ vào chảo, thêm chút dầu ăn đảo đều cho hỗn hợp se lại, dậy mùi thơm là được. Cho 1 muỗng canh nước cốt me chua, 2 muỗng canh đường, 1,5 muỗng canh nước mắm vào chảo đảo đều cho đường tan hết. Bạn có thể nêm nếm lại để vừa với khẩu vị nhé. Khi hỗn hợp đường mắm me sôi, bạn vặn nhỏ lửa, đun đến khi hỗn hợp hơi sánh lại thì cho tép khô và hành tỏi ớt vào đảo đều.
Xoài gọt vỏ, thái miếng vừa ăn, đợi nước sốt nguội cho ra chén chấm, có thể cho vào hũ kín bảo quản ngăn mát tủ lạnh để dùng dần.
